What's Cookin' Wednesday

As promised, I have a new recipe for you guys! This one is very near and dear to my heart. ;) We were introduced to this dish by our friends, the Allen's. They brought this to us when we had just gotten fresh, baby Cohen home from the hospital and were too sleep deprived to think of making a meal, much less buying the necessary ingredients. Please enjoy this, guys, hubby and I make it on a weekly basis.

Ingredients:
2 cans tomato soup
1 can Ranch style beans
1 can whole kernel corn
1 can cream style corn
1 can chicken broth
1 can diced tomatoes
1 pkg. Ranch dressing mix
1 pkg. taco seasoning
1 can water
Chopped chicken *we buy a whole rotisserie chicken and just tear it up... super moist and super easy


Ok, y'all, here's the tricky part. 


Open all the cans. Pour them in the crock pot. Add the seasoning packets, and the shredded chicken.



*Don't necessarily get a BBQ chicken, that's all Kroger had out this morning.

Cook on high for 2-3 hours. Done.


I didn't get any pretty pictures of us chowing down on this particular pot o' soup, because we took it to some friends of ours who just had a baby! Talk about paying it forward!

Pair this up with some lime juice, crema Mexicana and avocado... mmm. Perfection. Crumble up some tortilla chips.. go to town! Sprinkle with queso fresco? Yes, please.

Best part?
Clean up is a breeze. :)

  1. Yum! This seriously looks so good! It's sounds similar to this taco soup we make, but with chicken and a few differences. My mouth is watering! haha. And adding queso fresco sounds delish!
